Berkshire pork is a heritage breed of pig, which was discovered over 300 years ago in Berkshire County in the United Kingdom. Berkshire pork is renowned for its richness, texture, marbling, juiciness, tenderness and overall depth of flavor. It is thought by many to be the Kobe beef of pork.
Large Black is a heritage breed making a comeback in the USA and around the world. The American Livestock Breeds Conservancy estimated the Large Black population of the United States at 300 breeding hogs in 2008, and lists its status as “critical”, which means that fewer than 200 animals are registered each year in the United States. There are estimated to be fewer than 2,000 worldwide. Besides conservation for the sake of genetic diversity in livestock, the breed is also coming to be seen as a good option for fulfilling the needs of an increasing number of consumers interested in pasture-raised pork.
For food safety, raw ground pork products should be cooked to 165°F for at least 15 seconds. Many cooks use color as an indicator of doneness, but this is not an accurate indicator. We advise to use a meat thermometer to ensure the proper minimum temperature is reached.
On the stove top you can poach raw-cased sausages to 140°F and then fry or grill to 165°F internal temperature. The meat may remain pink in the middle, which is fine. You do not have to boil a sausage completely for food safety. In fact, boiling can cause your casings to explode when the internal temperature reaches the boiling point. You may have noticed this when accidentally over cooking sausages on the grill. Overcooking sausage can lead to a dry, mealy texture, which is undesirable.
